Barbera d’Alba D.o.c.

Castellinaldo

Grape variety: Barbera 100% 
Vineyards: Castellinaldo d’Alba - Piemonte - Italia. 
The altitude of the vineyards varies from 320 to 350 mslm; it is characterized by a dense planting system - around 5.000 vines per hectare. The aim is to produce medium-small bunches, allowing to obtain a raw material of the highest quality.
Soil: Clay-calcareous.
Harvest: End of September.
Vinification: during the last days before the harvest we strictly follow the maturation curve of the grape through sampling and analysis, in this way we can indentify the optimum time to pick them.
Also for this wine, the harvest is done by hand by highly qualified personnel with perforated cases of about 18 - 20 kg to protect the integrity of the grape in the best possible way until pressing.
The fermentation takes place in steel and lasts about 10 days with temperature controlled - 25°-26° C - so as to extract in the most appropriate way the coloring matter; in this way we can also enhance the elegance and the typical aromas of this area of production. The wine ages in wood for 15 months and at least 6 months in the bottle before being released on the market.

Sensory profile: the color is deep and intense. The aromas identify a profile rich and elegant, with a scent of fruit and, in the background, licorice and violet. The taste is full and structured, refined with a persistent and long final. It is really excellent with important first courses and with red meat, but also long-aged cheese.
