Grape variety: Nebbiolo

Vineyard location: Vezza d'Alba - Piedmont - Italy. Valmaggiore sub-zone famous for the quality of its Nebbiolo grapes. Christine of France and Filippo d'Agliè have been making extensive use of Nebbiolo di Valmaggiore since 1640. South-west exposure, the average age is 35 years.

Soil: Loose, tending to sandy

Harvest time: Early October

Vinification: The aim is getting the highest possible grape quality at the moment of the harvest.
In order to achieve this, we carry out two thinnings (beginning and end of August), eliminating part of the apices and wings of the bunches. Given the exceptional exposure, the bunches must be kept shaded by the leaves, otherwise on hot days the sun would initially cause burns and later the grapes to dry out. For the grape harvest, which in this vineyard is carried out in two steps spaced one week apart, we use perforated crates of around 18-20 kg to protect the integrity of the grapes as best as possible
until pressing. Fermentation is carried out in steel and lasts approximately two weeks, while maceration lasts for 40/45 days.
Afterwards, the wine stays in barrels (partly new and partly already used), in which malolactic fermentation takes place, for 16 months before being blended again in steel tanks.
It is bottled in August and released on the market after one year in bottle, hree years after the harvest.

Sensory profile: Rich and immediate bouquet with perceptions of violets, raspberries and blackberries, enriched by elegant spicy touches. The palate, rich and structured, offers a crescendo of violet and cocoa sensations up to the powerful and austere encounter of the tannins extending the whole of the sensations in a persistent finish.
Excellent with game roasts, braised and stewed meats, delicious with cheeses.
