Soil: Clayey-calcareous
Harvest: Mid-end of August
Ageing: 36 months in bottle on its own yeasts at 12° - 13°C
Colour: Pale pink, tending to powdery and onion skin.
Produced from the main grape variety of our region, with a dégorgement
zéro dosage. The perlage is very fine and persistent.
The bouquet recalls the characteristics of the grape variety, raspberry and
bread crust.
On the palate it is dry, persistent with fresh and pleasant savouriness. Ideal
as an aperitivo and excellent with raw and marinated fish, as well as raw
veal and shellfish
