Grape variety: Nebbiolo

Vineyard location: Ginestra in the municipality of Monforte d'Alba - Piedmont - Italy. Southwest, west exposure.
Particularly vocated area, always known as a land of great vineyards and already mentioned in 1800 by Fantini as a region capable of producing Barolo wine of “superior excellence”

Soil: clayey-calcareous

Harvest time: first half of October.

Ageing: 24 months in oak barrel and 6 in bottle

Vinification: Harvesting is carried manually by specialised staff. Following the crushing, alcoholic fermentation lasts for about 15 days in small steel tanks with repeated pumping for correct colour extraction. Maceration continues even after fermentation, for a total period of 40-45 days.
The wine then rests in oak barrels for at least 40 months. It continues its ageing initially in steel tanks and then in bottle.
After about 7 years from the harvest, the wine is ready to be released on the market.

Sensory profile: a very elegant and pleasant wine, both on the nose and the palate. Persistent, thanks to the extreme sweetness and tension of the tannins. Interminable. So pleasant that it can be paired with what is preferred.
