CUVÉE ZERO ROSÉ

METODO CLASSICO EXTRA BRUT

 

Soil: Clayey-limestone from the Roero area

Date of harvest: Mid- to late August

Aging: 36 months in the bottle on its yeast at 12°-13°C

The grape variety used is the most famous of Piemonte and the dégorgement is zéro dosage. Its light rosé color recalls the blush of onion peel. The perlage is fine and persistent. The aroma is characteristic of the grape, with raspberry, violet, and bread crust. In the mouth, it’s dry, persistent and fresh. It’s the deal wine for an aperitif, marinated or raw fish, steak tartare, and crustacean soup
